How To Prepare Spicy Party Jollof Rice | One of the things that might interest you about the spicy party jollof rice recipe is that it is quite different from the regular home made jollof rice or concoction rice.
It is rich in alot of ingredients that gives you that party jollof taste and aroma. Here are the list of ingredients one should use.
- 5 cups of long grain polished rice
- 1 kilo of chicken
- 1/2 – 1 cup of fresh bell peppers
- 1 cup of fresh tomatoes
- 1/2 cup of chilli peppers
- A small cup of cooking butter
- Two balls of onions
- 1 cup of oil
- Nutmeg (optional)
- Curry
- Thyme
- Two small tin tomatoes
- Carrot
- Green beans
- Green peppers
Steps On How To Prepare Spicy Party Jollof Rice
I am going to show you how to do these in 5 very easy steps.
STEP 1
The first thing one is supposed to do make this delicious recipe is to boil or marinate the chicken whichever way you like it, definitely after washing .
I like to boil my chicken and then fry afterwards because it still gives the chicken that deep taste of the ingredients.
You can boil your chicken with a table spoon of curry and thyme and a little bit of onions (optional). Once this is done, you can proceed to fry your chicken.
Note: keep the chicken stock as we would be using in to cook this delicious recipe
STEP 2
Take 5 cups of long grain polished rice, you can use whichever rice you want but i like to use long grain polished rice because it comes out really fine and doesn’t stick together. You do not have to parboil the rice because it might end up not giving you that spicy jollof taste.
All you have to do is wash the rice with a little bit of salt about 5 – 6 times to take out excess starch from the rice.
Do well to keep it in a sieve once you’re done to take out unwanted water.
STEP 3
Wash the bell peppers, chilli peppers and the fresh tomatoes and blend together. You can choose to add garlic and ginger to the mixture (optional) for a better aroma. I do not like to blend my onions because i feel its best sliced, so proceed to slice the onions.
You can use the oil you used to fry the chicken ( to save cost), heat it in a pan for about 2minutes, add a pinch of salt (we do this to avoid burning the onions).
Fry the onions for about a minute and then add the tin tomatoes. We are going to put the tin tomatoes first before the fresh tomatoes because it removes its “sour taste”.
Stir together for another 2-3 minutes and then proceed to add the fresh mixture (bell peppers, chilli peppers and the fresh tomatoes) you’ve blended together, continue to stir at intervals for another 5 minutes.
I’m sure your kitchen is already filled with this mouth watering aroma. Add curry and thyme, nut meg to taste, add salt and maggi and any other seasoning you feel like.
Add the chicken stock and add a little bit of water as well depends on how much the chicken stock is. We have to make sure the level of water is above the rice when it is put in. You can now put in the rice and cook at a low heat to avoid burning when its not done yet. You can wrap a foil paper on the cover of the pot so as to retain heat and you don’t need to keep adding and adding water.
Leave to steam for about 20- 30 minutes. You can check at intervals to keep the rice “hydrated”. Once the rice is soft and the water is dried, leave it to burn for a few minutes (This is one of the biggest secrets of cooking party jollof rice), this burning part gives it that incredible bottom pot taste.
It is at this point you add your butter (Note: the butter prevents the rice from sticking together and adds deliciously to its taste). You can then turn off your gas or stove.
STEP 4
Cut some onions in circles ( This gives it a beautiful outcome). Add the vegetables you must have cut (carrot, green beans, spring onions).
Add these to the rice already cooked and cover for about a minute or two. You can then open it and stir.
These veggies gives our spicy party jollof rice a very beautiful and mouth watering look. Congratulations! We did it, and now the last step.
STEP 5
This happens to be the easiest step in this recipe. It entails dishing our beautifully cooked spicy party jollof rice and of course eating it!
